Molly Wilkins, Apprentice, discusses her role at Belmond Le Manoir aux Quat’Saisons.
What has been your career journey?
I started off by doing work experience at Belmond Le Manoir in housekeeping back in July 2013 and this turned into a Saturday job that September. I then continued the Saturday job until July 2015 which is when I started my full apprenticeship at Belmond Le Manoir. Since then I have been in the following departments: Housekeeping, Reception, Reservations and Kitchen.
What is your day like?
At the moment I am working as a Chef on a 9 – 5:30 shift, Monday to Friday. Every day I am learning something new e.g. knife skills and how foods are cooked. I am currently on the appetisers section which is the very first course that is presented to the guests either for lunch or for dinner. My tasks throughout the day are to make sure that everything is set for service and making sure the fridge is full for the next day.
How have you got to where you are?
I have worked really hard. I have enjoyed each department and not been afraid to ask for help if I need it. I have also had amazing help, support and encouragement in every department.
What work projects or challenges have you been involved with?
I have set myself small tasks throughout each department to help me progress e.g learn how to make room bookings lunch and dinner, cookery school and more during my time in Reservations. I also have tests set to complete by my NVQ tutor.
What's the best thing about your job?
Everything. I could not fault anything about it. I love working with talented people.
What tips or advice would you give to anyone considering a career in the industry?
Always try your best. Never be afraid to ask for help or if you are uncertain of anything.
