A Head Waiter/Sommelier has the responsibility of serving and selling wine to guests, and will recommend suitable wines for all types of food, occasions and budgets

Job Summary

  • To welcome and seat diners, advising each on their choice of food and wine and taking their order
  • To organise and manage their team: organise their work and training newly recruited staff members
  • To organise the layout of the dining room to create a warm and welcoming atmosphere
  • To co-ordinate with the kitchen
  • To ensure that his or her team offers the highest level of service in the welcome it extends to its customers and the way its serves their meals
  • To ensure health and safety rules are complied with
  • To manage stocks; including the correct storage of wines
  • To ensure the continuity of the equipment supplied for his or her use

  • Sales Skills
  • The ability to listen: detecting and anticipating needs
  • Attention to detail
  • In depth knowledge of wine
  • Good relationship skills: being responsible for welcoming diners

Qualifications and Training

There are a variety of courses and qualifications you can earn to become a professional Sommelier. In College you should be taking general BTEC’s in Food and Safety; as you progress you may want to look into other courses given by specialist bodies.

Salary Expectations

A Head Waiter/Sommelier can expect to earn between £19,000 and £25,000 a year, with an average salary of £21,000
