Tom Featherstone

Name: Thomas Featherstone

Current Placement: Hollybush, Hampstead (Fuller’s)

Apprenticeship: Chef de partie Apprenticeship Level 3

Tom’s career journey so far has consisted of:

Starting his career at Bull Inn Sonning, before going on to work at Fuller’s Kitchen (at HQ) and The Signal Box’s new opening at Euston Station. Tom went on to complete his Level 2 Commis Chef apprenticeship, before applying to participate in the British Culinary Federation (BCF) competition – where he was a runner up for Young Chef of the Year. Finally, Featherstone won the Fuller’s Apprenticeship of the Year award.

What’s next for Tom?

Utilising his pastry expertise to enhance the menu and potentially having his own signature dish on the menu. Advancing his skills in chocolate work/chocolatier.

Proudest Moment

Finalist of BCF of the year. Thomas had never worked in a Michelin starred environment but was against Michelin starred chefs and he felt proud to be able to compete with chef’s at that level.

Biggest Challenge

Overcoming his anxiety of speaking to people. He wanted to give credit to his previous head chef, John Pellew, for giving Tom the opportunity to move into the world of cheffing.

Happiest When

The team can reflect after the week closes on Sunday and everyone can catch up over an evening drink.

Outside of work

Supper clubs with another Chef Apprentice.
